Healthy Potato and Beetroot Salad
Time: Under 25 minutes
This delicious and fresh tasting salad is perfect for a summers day.
It’s simple to make and it looks as good as it tastes. If you’re stuck for something to bring to your next BBQ then this is the dish for you.
Serve it with a dressing of your choice, but we would recommend trying it with this:
- Low fat crème fraiche
- 2tsp mayonnaise
- 1tsp grain mustard
- Juice of ½ lemon
- ½ tsp poppy seeds

Parchment Tomato Pesto Salmon
Prep time: Under 5 minutes
This is a light & tasty dish, which takes minimal effort to prep.
Serving a dish in parchment paper just has a sort of elegance to it. If elegance isn’t your thing, the parchment can double us as substitute plate! (not recommend, but doable!)

Lemon & Yogurt Chicken Flatbreads

This is one of those “sneakily easy” recipe’s. The majority of the ingredients are in the title!
With a refreshing summery lemon & garlic marinade, this would work well on a barbecue.

Chickpea and Summer Vegetable Stew
Time: 30 minutes
Now we know what you’re thinking “A summer stew?!”. But please stick with us.
This light & simple to make stew is a great way to use fresh summer vegetables, in an easy one-pan meal.
The work load is minimal: A bit of chopping, followed by leaving it all to simmer.

Chocolate Cashew Butter Fudge Pops
Even if you are on a heath buzz, it's still important to have a (healthy) treat.
